Week 2 of the Elimination Diet

Week 2 of the elimination diet and things are going well! Hereโ€™s the details about what I made ๐Ÿ˜‹ Everything is gluten free, dairy free, soy free, high fructose corn syrup free, low fat, low processed sugars.

A mix of delicious veggies!! Organic cauliflower, purple cabbage, and butternut squash. These are the raw veggies.

Organic butternut squash and purple cabbage with sliced chicken breast, this will be put in the oven on convection roast at 400 degrees for 35-40 minutes.

Completed roasted veggies on 400 degrees for 25 minutes.

I made a mix of chicken breast, tuna, radishes, wilted spinach, kale, and Romain lettuce seasoned with lemon pepper seasoning. The start of my mix for a chia seed applesauce cake.

This is pumpkin oatmeal flat cakes. I made the batter, spread it flat on a baking sheet, baked it on 350 degrees for 30 minutes then sliced into rectangles. It has steel cut oats, pumpkin purรฉe, maple syrup, and a few other ingredients. Iโ€™ll be eating this for breakfast with brown rice syrup.
