Pho Made Easy

Meal prep! 😋 Pho is a great meal prep option because it can be quick to make and I’ll tell you how. Plus you can make a lot of it, the broth freezes well.

I bought some chicken pho broth concentrate, some Foster Farms shredded chicken breast, and some rice noodles. You add water to the chicken pho broth concentrate and bring to a boil, I added fresh finely chopped parsley, cilantro, and mint to my broth. I threw in a splash of lime juice as well. Then I boiled the water for my noodles and heated the chicken in the microwave(it’s already cooked, it’s just frozen). This is a great dinner option as well especially when you don’t have a lot of time.
