Deluxe Salads Pt 2

My salads for the rest of the work week that I made!! Homegrown organic romaine lettuce, goat cheese, shredded chicken breast, hickory smoked bacon, dark red kidney beans, and lime. I made dressing of apple cider vinegar, olive oil, Dijon mustard, kosher salt, and coarse black pepper. Yum!! 😋

Deluxe Salad- Salmon and much more

I made deluxe salads for my lunch this week! Yum. 😋This one is homegrown organic Romain lettuce, goat cheese(I had never had goat cheese before a couple weeks ago and now I LOVE it), and mojito lime salmon. I made a safflower oil and lemon juice dressing to go with it. Having gastroparesis makes it very hard to eat sometimes but it doesn’t stop me from making delicious food! So, while I can’t always enjoy what I’ve made, I enjoy the process of cooking.

Pho Made Easy

Meal prep! 😋 Pho is a great meal prep option because it can be quick to make and I’ll tell you how. Plus you can make a lot of it, the broth freezes well.

I bought some chicken pho broth concentrate, some Foster Farms shredded chicken breast, and some rice noodles. You add water to the chicken pho broth concentrate and bring to a boil, I added fresh finely chopped parsley, cilantro, and mint to my broth. I threw in a splash of lime juice as well. Then I boiled the water for my noodles and heated the chicken in the microwave(it’s already cooked, it’s just frozen). This is a great dinner option as well especially when you don’t have a lot of time.

Steak Salad

I made this insanely delicious yet simple salad 3 weeks ago 😋 Step 1) Pick a lettuce of your choosing. 🌸

Step 2) Grill a piece of steak, I seasoned mine with salt and pepper. I grilled it on a cast iron skillet which I love! 🌸

Step 3) Make a delicious dressing. Here’s the very simple and easy dressing I made for this salad.

Mix together:

Dijon mustard( 1 Teaspoon)

Lemon juice(5 Tablespoons)

Olive oil(2 Tablespoons)

Kosher salt(sprinkle to taste)

The dressing is tangy which is the pop of acid this salad needs.

Step 4) Drizzle the salad with olive oil and sprinkle with Kosher salt. 🌸

Meal Prepping is a Time Saver

The great thing about meal prepping is when I come home, I can just take my food out of the fridge, heat it up, and enjoy!! It’s a definite time saver, especially when I’m not feeling well. Tonight, I’m eating lemon pepper chicken breast, steamed broccoli, sweet potato, and a roll. 😋
